Julie's Mexican Enchilada's

 

Ingredients:

Corn tortillas

Red Enchilada Sauce

Ground meat (beef, turkey or chicken)

Taco seasoning

Shredded Mexican cheese


Preheat oven to 350 degrees.

Cook meat in skillet and drain.  Add taco seasoning and water according to directions on package.  Simmer for about 15 minutes.  Spray cooking dish and layer tortillas, cooked meat wtih seasoning & enchilada sauce.  Repeat twice ending with cheese on top.  Cook for 25 minutes.  Serve with tossed salad and chips & salsa.
